Food That Got Me Through Quarantine


Hoorah it’s been almost a whole year since baking bread and tie dying clothes took America by storm, and guess what you survived it! I wanted to share the recipes that got me through the past year; and keeping true to my gift giving love language, I also shared these with family and friends, who were just as content in their discovery.


Breakfast

Yogurt and granola is as basic as it gets, but for someone like me that became lactose over the last couple of years I had to give up my staple meal. As vicious as they can be, I do owe a thanks to the vegan army because now in 2021 there are vast options of dairy free yogurt to indulge in again. The best dairy free yogurt I've had is from Silk, the almond milk version, and you can't taste or feel a difference so long as you shake it well before opening. My other favorite meal has been my open faced pb&j’s, the best thing that’s ever happened to a rice cake imo, just be sure they’re caramel cakes! A whole loaf of bread is too advantageous for a person living on their own like me, and even a half tends to go moldy after a week in my pantry so a rice cake was the perfect substitution in this case.



Lunch


This was my most unexpecting meal. This chicken fried quinoa recipe has been a bi weekly thing since I made it the first time. For a picky eater like me who’s trying to broaden my taste this was a bid step for me, and I even recommend it to anyone that has texture issues since all the veggies and chicken help mask that quinoa. If find that this recipe goes beat with some type of veggies and carbs on the side to make it more filling.

Dessert


For a few years now baking has been one of my favorite things to do over the holidays, and I didn’t let my lactose intolerance or quarantine stop me. Since the first lockdown I’ve baked more than I have in the past 3 years, and these recipes I’m sharing are the ones that have been crowd favorites. I swear I’ve never made better cookies in my life, and yes they are vegan too!



This past year gave me the opportunity to focus on fueling myself with better foods to help set up my future (eating both of these cookies once in a while are still better than the drinks and junk food I’d eat back in college). This post was mainly dedicated to my friends who keep asking for the cookie recipes, but I also wanted to take the time to document the foods I’ve been trying, not only for myself but anyone else that also struggles with going out of their comfort zone when it comes to eating.
